With the National Minimum Wage (NMW) now almost fifteen years old, and with another increase pending on 1st April 2017 HMRC have issued a list of the most elaborate excuses they've been given by employers for not paying the appropriate rates:

EEA Citizens Right to Work in the UK - Deadline 30th June 2021

On 30th June 2021, all EEA citizens that haven’t provided their employer with evidence of either ’settled status’,’pre-settled status’ will cease to be eligible to remain and hence work in the UK.

Unless the UK Government extends this deadline, and there’s no indication that they will, it will be illegal for you to employ an EEA citizen in the UK after 30th June 2021 and the UK immigration authorities can levy significant fines on employers for doing so.
I am aware that some EEA citizens have applied for and been granted British citizenship and this will allow the to continue to live and work in the UK without the need for the above.
